Juicy coffee with notes of passion fruit, dark chocolate and strawberry
During my visit to Peru I felt in love with taste of coffee that Eli had produced. Eli owns coffee farm near the village Las Pirias in Chirinos, that is size of 4 hectares and is located between 1800 and 2000 masl. i am impressed of how much effort Eli puts in to cultivating and processing high quality coffee. Coffee cherries are handpicked selectively and after that coffee was washed and floated, before undergoing a skin drying process under shade for one day. The coffee was then moved to a solar drying tent, where it dried under controlled conditions for 45 days. Eli is in a partnership with Falcon Coffee Peru, where they select farmers based on their potential and willingness to produce outstanding qualities. Falcon offers training and financial incentive for farmers to produce high quality coffee.
