Coffee farming runs deep for Yolanda Cabrera Alvarez. The daughter of coffee farmers, Yolanda has passed on her passion for coffee cultivation to her own children, who are now adults helping on her on the farm. High altitudes of 2,150 meters above sea level keep temperatures cool, which helps limit the spread of pest and diseases. Yolanda receives technical assistance from Valle Inca to help her produce high-yielding coffee trees with unique characteristics. Yolanda and her family selectively hand pick ripe, red cherry and process it on their farms. They pulp and ferment coffee anaeroically in sealed GrainPro bags for 40 hours. The cooler temperatures at this high altitude slow fermentation. Following fermentation, they wash parchment in clean water and lay it on drying beds to sundry. They rake parchment frequently to ensure even drying. It takes approximately 15 days for parchment to dry.
