High in the mountains above the northwestern city of Jaen, Elmer Tineo Mendoza and his family brew award-winning coffees at their La Palta farm. This special batch placed third in Peru's Cup of Excellence competition, which reveals the best coffees from the world's 11 leading coffee-producing countries.
Elmer himself is responsible for crop management and harvesting, and the eldest son Elvis oversees the post-harvest process. In recent years, La Palta's infrastructure improvements (including indoor parabolic drying facilities) have greatly influenced the quality and composition of the farm's coffees.
This natural treated batch was floated in water to remove poor quality cherries, then allowed to rest for 60 hours before being placed in an indoor drying bed for 25 days to achieve optimum moisture content.
The result is soft, juicy coffee with hints of apricot, toffee and cranberry.
