The coffee was subjected to dry aerobic fermentation for 24 hours, after which it was placed in Grainpro bags for 50 hours at a temperature below 22°C. After this, the whole cherries were placed on raised platforms until
the ideal moisture content had been reached.

Felipe Arcila is one of the founders of Cofinet, along with his brother Carlos Arcila. They are fourth-generation coffee farmers. Their father, Jairo Arcila, is a third-generation coffee farmer from Quindío. Jairo told his sons that the coffee industry was not profitable because he had previously faced many financial challenges. Because of this advice, Felipe and Carlos both continued their careers in civil engineering and traveled to Australia to pursue a master's degree.

Felipe was amazed by the Australian coffee culture he saw firsthand and was excited to be a part of it. When Felipe finished his studies and returned to Colombia, he became even more passionate about coffee and began studying specialty coffee. Felipe and Carlos then purchased Jardines del Edén, where they focus on growing exotic coffee varieties. In 2015, Felipe and Carlos founded Cofinet and began producing, sourcing and exporting specialty coffees to the rest of the world.
