This coffee comes from Finca El Aguacate in the Pueblo Viejo community, Perquin, Morazán department, in the Cacahuatique mountain range in northeastern El Salvador. The name of the mountain range means “hill of cocoa gardens.” Local people have traditionally grown cocoa, fruit trees and coffee here. However, military conflicts in the late 20th century and coffee rust have meant that today only 4% of the country’s coffee crop is grown here. The area is characterized by clay soils. The climate is tropical, with an average temperature of 25°C and rainfall of 1,100 mm. The local coffee is known for its creamy body, medium acidity and caramel-like sweetness. The area has preserved old-growth forests, so farmers grow coffee trees in their shade. Cuscatlecos is one of the most popular varieties for local farmers. It is a cross between Villa Sarch and the Timor variety T5296, created by the PROCAFÉ Institute in El Salvador. The main characteristics of Cuscatlecos are: growth height up to 1600 masl, resistance to leaf rust, rounded cup profile with more refined and broader flavors thanks to a longer maturation time, but also instability
from generation to generation.
